One of the common ways to get this particular material is by beating enemies. The only way you’ll get this to drop is by beating enemies who are at least Level 30, anything below that and there’s no chance of getting Greater Blood Essence to drop.

You can craft Greater Blood Essence if you’re willing to put in the time to defeat lower level enemies to get Unsullied Hearts. For every 4 Unsullied Hearts you collect you can make one Greater Blood Essence if you have the Blood Press unlocked.

There’s a more tedious and less useful crafting method where you take 200 blood essences and turn them into one Greater Essence but that wastes a lot of resources and takes a while to unlock anyway.
